In Term 1 – 4 Students spend 2 days training at 250 Collins Street, Melbourne and complete a minimum 1 day practical placement either rostered into Schön Training Cafe, Bar & Restaurant or within their existing hospitality employer.
Commercial Cookery – Specialisation
This specialisation focuses on cooking that takes students through the basics of cookery and then up to cooking a la carte, functions and set menu.
Students spend 1 day in off-the-job classes, 1 day doing kitchen theory and 1 day at our state of the art Fagor kitchen averaging attendance of 20 hours per week.
Certificate II in Kitchen Operation – Term 1 & 2 (20 Weeks) $125.00
Units covered in Term 1 & 2 include: preparing appetisers, salads, stocks, sauces and soups; preparing vegetables, fruit, eggs and farinaceous dishes; hot & cold desserts. Participants also receive training in: OH&S; food safety; food presentation; knife sharpening; cutting techniques etc.
Certificate III in Commercial Cookery – Term 3 & 4 (20 Weeks) $125.00
Units covered in Terms 3 & 4 include: selecting, preparing and cooking poultry; seafood and meat; hot and cold desserts, pastries, cakes and yeast goods and planning and preparing food for buffets.
Term 3 & 4 of first year build upon the competencies developed in Term 1 & 2.
Diploma of Hospitality – 2nd Year (40 Weeks) $225.00
In year 2 both the food & beverage and commercial cookery students undertake management specific training to gain practical skills in the management of a hospitality venue including: recruitment; rostering; training; managing staff performance; ordering; managing finances; occupational health and safety; marketing and food safety.

Course Overview
This two year diploma provides hands on training designed to assist our students gain meaningful employment in either cookery or front of house operations roles including:
- Cook in a cafe, restaurant, pub; function centre or hotel;
- Coffee machine operator (barista);
- Barperson, including cocktails, in a pub, bar, restaurant or function venue;
- Waitperson in a café, restaurant or function venue;
- Food & beverage, functions or banquet attendant of a 3 to 5 star hotel.
This course also assists students to develop supervisory and leadership skills necessary for roles such as shift supervisor, duty manager and maître d’. Venues for these roles may include: hospitals; bottle shops; canteens; bars; hotels; motels; sporting arenas and many more.
Hospitality Training Australia is located in the heart of the city across two levels at 250 Collins Street, Melbourne and has a licensed cafe, bar, restaurant and commercial training kitchen located next door to the Queen Victoria Market.
